Mama's Pico de Gallo Salsa

This salsa is a game-changer!!! & its SUPER SIMPLE to make.

It's actually my mom's recipe, and one that I've been obsessed with for years. I almost didn't want to share it with you because it's my signature dish to bring to any party, pot-luck, tailgate etc. and I always get compliments on it. But it's so simple & easy there's really no point in keeping it a secret - and now you'll have something to make for your next get together that people are sure to enjoy. Who doesn't love chips and salsa? 

Store-bought salsas tend to have lots of additives and extra ingredients that end up making them rather unhealthy, but if you use fresh veggies and chop them up yourself you can make a colorful salsa that not only has a better flavor, but is also good for you! (excluding the chips but whatevs) 

This is a chunky, "pico de gallo" style salsa and is perfect on its own for dipping tortilla chips, (black bean chips are my FAV) or as a topping for tacos, salads, burritos, quesadillas etc. You have to try it!

INGREDIENTS

2-3 ripe tomatoes diced

1 bell pepper diced (I like to use yellow or orange to add color variety)

1 jalapeño pepper minced

1/2 red onion minced (can sub for a bunch of green onions or 1/2 a white onion)

Big bunch of cilantro roughly chopped  (remove the stems)

Juice of 1 lime (microwave the lime for 10-15 seconds to allow more juice to come out)

Frank's Hot Sauce to taste (start with a few splashes...you can always add more)

1/4 tsp. pink himalayan salt

1 packet of Stevia or whatever sweetener/sugar you prefer

HOW TO

Chop everything up and mix it all together in a serving dish. Always taste test before serving! Add extra hot sauce or lime juice to taste. I like to go heavy on the cilantro because it gives it that really fresh flavor, but if you're not a fan you can always leave it out (not recommended).

You can also make this salsa a little sweeter and give it a tropical vibe by adding diced chunks of fresh mango. You could throw it on top of a salad or pair it with grilled white fish & rice. It's really versatile so play around with it!
