Gooey Nut Butter Brownies

These gluten-free, dairy-free, chocolatey brownies are one of my favorite guilty pleasure treats without any of the guilt! The ingredients are simple and they take less than 20 minutes to make.

*If you want them to be completely dairy-free make sure you use dairy free or vegan chocolate chips!

INGREDIENTS: 

1 cup natural nut butter (I use 1/2 cup peanut butter and 1/2 cup almond butter) 

1/3 cup honey 

1 egg 

3 Tbs. raw cacao powder 

2 Tbs. coconut sugar (or natural brown sugar)

1/4 cup chocolate chips (to keep these dairy-free I chop up chunks of a vegan chocolate bar)

1 tsp. vanilla extract 

1/4 tsp. salt

1/2 tsp. baking soda 

 

HOW TO:

Mix all the ingredients together *except the chocolate chips* and stir until smooth and creamy.

Fold the chocolate chips into the batter leaving some extra aside to sprinkle on top.

Pour batter in a parchment-lined bread pan or baking dish (or just grease the pan with coconut oil) and add remaining chocolate chips over top. Bake at 350 degrees (176 Celsius) for 15 min. Let cool before cutting. Enjoy!

Store leftovers in an air-tight tupperware container to avoid getting crusty.

*Caution: Because they’re made from nut butter and not flour they can burn easily if re-heated in the microwave for more than a few seconds.
