
10 min. Melty Cheese & Veggie Wrap
Apr 01, 2021Looking for a speedy lunch option that's both delicious & good for you? Try this 10 min. veggie & cheese wrap that's packed with flavour and nutrients.
This is a favorite in my house, even for my boyfriend who's not the biggest veggie eater. He absolutely loves these wraps, especially because they're so quick and easy.
*Here I've used a regular tortilla wrap but lately I've been loving these Coconut Tumeric wraps! If you're gluten-free, or looking for an all natural alternative option I highly recommend NuCo Coconut wraps. They are raw, vegan, paleo, gluten free, kosher, and DELICIOUS. They're wafer thin but so so tasty.

INGREDIENTS:
Shredded carrots
Baby tomatoes
Red onion
Mixed lettuce
Vegan pepperjack cheese (or normal if you prefer)
Tortilla wrap (Coconut Tumeric wraps are an amazing GF option)
Yellow Mustard
Optional: Veggie patty
HOW TO:
(AMOUNTS AREN'T REALLY IMPORTANT IN THIS RECIPE, JUST THROW IN HOWEVER MUCH YOU WANT!)
Place tortilla or coconut tumeric wrap in a pan on low heat with a slice or two of pepperjack cheese. Let sit for a couple minutes to allow cheese to get melty. *Watch closely if you're using a coconut wrap as they tend to crisp up faster!
Meanwhile, add a handful of shredded carrots, 8-10 baby tomatoes sliced in half, and some chopped red onion into a separate pan with 1-2 Tbs. of olive or avocado oil. Sprinkle with garlic salt and black pepper and sauté until soft.
Remove wrap from pan & fill with a handful of mixed greens (spinach, arugula, iceberg, whatever you prefer). Top with the sautéed carrot, tomato & onion, and drizzle yellow mustard over top. Wrap it up and enjoy!
*If you want to beef up your wrap you can heat up a veggie patty in a pan for a few minutes and then break it into small chunks and throw it into the wrap as well.
